Instructions

Step 1
Trim ends of the zucchini, cut in half, then slice.
Step 2
Soak a rice paper in cold water for about one second.
Step 3
Place a zucchini slice on the soaked rice paper. After 10-20 seconds, fold the rice paper around the zucchini.
Step 4
Coat with breadcrumbs. If they don’t stick, brush the rice paper with water.
Step 5
Heat 2 tablespoons of oil in a pan over medium-high heat. Cook zucchini for 3 minutes on each side until golden brown.
Step 6
Serve with sweet chili sauce or pasta sauce. Enjoy your crispy and delicious zucchini rice paper!
