Coconut Curry Ramen
Coconut curry noodle soup 🥥🍜 Recipe below 👇🏽
Ingredients:
2 tbs olive oil
½ cup bulb of a green onion, chopped
3 garlic cloves, minced
3 tbs Thai red curry paste
1 tbs ginger, minced
3 cups chicken broth
1 cup coconut milk
1 cup cooked protein, chopped (I used prawns)
2 tsp brown sugar
1 tbs fish sauce
Salt and black pepper to taste
Rice noodles
Cilantro, lime and red chilli to garnish

Instructions
Step 1
1. Heat olive oil in a pot and add the onions and garlic. Sauté for 3 minutes.
Step 2
2. Add Thai red curry paste and ginger, and cook on medium heat for 2 minutes.
Step 3
3. Stir in chicken broth, coconut milk and your cooked protein and bring to a boil then cover simmer on low heat for 10-12 minutes.
Step 4
4. Season with brown sugar, fish sauce, salt and pepper, then when you’re happy with the taste go ahead and add the rice noodles.
Step 5
5. Cook until noodles are tender, about 3-5 minutes.
Step 6
6. Garnish with cilantro, lime, red chillies and green onions and serve.
