Coconut Chicken & Mash

Low key excited for winter because I can have more meals like this 👀🍲🫕 This recipe makes 3-5 servings, you can slice the chicken breasts in halves to make more servings. Here's what you'll need: - 3 chicken breasts - Seasonings of your choice or marinade (I used mixed herbs, garlic powder, and paprika) - 1 can of coconut cream - 1 brown onion, diced - Half a bag of spinach - 200g of sundried tomatoes - 1 tsp of minced garlic - 1 tbsp chicken stock powder - 100g of shredded cheese Method: 1. Preheat your oven to 180 degrees. 2. Use a knife to make slits in each chicken breast, then coat them in the seasonings or marinade in a bowl. 3. In a baking dish, add the onion, minced garlic, spinach, sundried tomatoes, stock powder, and cream. Mix them well to combine. 4. Place the chicken breasts into the baking dish and sprinkle the cheese over each chicken breast. 5. Bake for 30 minutes or until golden brown on top. 6. Serve with mashed potatoes. Sweet potato would slap, but I only had spud lite🍠🥔
