One Pan Roasted Chicken Drumsticks (Pantry & Fridge Clear-out!)

I had a few potatoes and tomatoes that weren’t looking their best, a leftover refrigerator onion, baby carrots that were forgotten about – and I added them all to a one pan to roast with a bunch of chicken drumsticks.
Best part is that the marinade is all made in the blender for a smooth consistency. Its beautiful colour comes from the tomato and its acidity will help the chicken tenderize. I added a few of my favourite pantry spices, but you can add any spices or spice mix you like and taste and adjust before pouring it all over the chicken.

Ingredients

Chicken and Blender marinade
20chicken drumsticks
2tomatoes
quartered
0.5red onion
large
3garlic cloves
Lemon zest
as much or as little as you like
1juice of lemon
1 tsphot sauce
1 TbspBBQ chicken seasoning
1 TbspMontreal Steak Seasoning
Salt
to taste, if the seasonings do not have salt
¼ cuplight olive oil
For the potatoes, carrots, and tomatoes
Instructions
Step 1
To your clean chicken drumsticks, make a few slits around the drumsticks for the marinade to seep through.
Step 2
To make the marinade, in a blender add the tomatoes, onion, garlic, lemon zest, lemon juice, hot sauce, BBQ chicken seasoning, Montreal steak seasoning, salt (if needed), and light olive oil. Taste test to see if anything is needed. Pour over the chicken and coat well. Arrange the drumsticks in a large pan with high sides.
Step 3
Season the potatoes in a bowl with Montreal steak seasoning, smoked paprika, granulated garlic, salt, and light olive oil. Toss to coat.
Step 4
Place the potato wedges in between the chicken pieces. In the same bowl, toss the tomatoes and carrots to scoop up the rest of the seasoning.
Step 5
Place the tomatoes and carrots right on top of the chicken and potatoes to caramelize in the oven.
Step 6
Cover the pan and let the chicken marinade for a minimum of 2 hours.
Step 7
Preheat the oven to 425 F. While the oven is preheating, remove the pan from the fridge and let it come to room temperature for at least 30 minutes prior to roasting.

Roast uncovered for 50 minutes. Serve with either rice or pita bread.
