½ cupmayonnaise

1 tablespoonseasoned salt

1 tablespoonlemon pepper

½ tablespoonsage

½ tablespoonthyme

½ tablespoonrosemary

½ tablespoonpaprika

½ tablespoondried parsley

1 teaspoonblack pepper

1 teaspoonsalt

1juice of lemon

1whole chicken

4potatoes

2red onions
small

6cloves garlic

cilantro

1lemon
sliced

½ teaspoonPaprika
for sprinkling on top before it goes in the oven
Instructions
Step 1
1. Preheat the oven to 400°

Step 2
2. Make the marinade by mixing together the mayonnaise, all the herbs and spices and the juice of one lemon
Step 3
3. Clean a whole chicken, pat it dry then pour the marinade over the chicken remember to save 2 tablespoons of the marinade for the vegetables. Rub the chicken with the marinade really well inside and out under the skin until well covered.
Step 4
4. Add the potatoes, onions, garlic, cilantro, on the bottom of a roasting pan. Add the reserved 2 tablespoons of marinade to the vegetables and give it a good mix. Next add the slices of lemon then put the chicken on top of the vegetables.
Step 5
5. Sprinkle the chicken with some more paprika, cover then into the oven it goes for about 1 hour and 20 minutes until the chicken is cooked and the internal temperature hits 165°.
