Honey Mustard Chicken with Potatoes

Instructions

Step 1
Preheat oven or air fryer to 200°C.
Step 2
Prepare the honey mustard dressing by whisking all the first 5 ingredients together in a small bowl. You can skip this and use a bottle of honey mustard dressing if you prefer.

Step 3
Place the chicken breasts between two layers of Saran wrap and tender them by hitting with a rolling pin or tenderizer until they are even and about 1cm thick. Then season with salt and pepper.

Step 4
Add 1/2 cup honey mustard to a big resealable bag with the chicken breasts. Place in the refrigerator to marinate. An hour at least is recommended, you can also make this marinade the night before for maximum flavour!
Step 5
Peel and chop the potatoes into 1cm pieces. Chop onion into 1cm pieces. Add veggies to a sheet pan or air fryer basket, and drizzle with olive oil. Toss with the garlic powder, salt and pepper.
Step 6
Bake at 200°C for 20 minutes.
Step 7
Remove the chicken breasts from the honey mustard and discard any marinade. Nestle the chicken into the potatoes. Don’t place on top of the vegetables.
Step 8
Bake an additional 10 minutes or more until the chicken reaches an internal temperature of 73°C.
Step 9
Remove from the oven and serve with additional honey mustard for dipping.
