Peanut chicken lettuce wraps

PEANUT CHICKEN LETTUCE WRAPS for Episode 5 of my DINNER IN 20 series, where I show you how to make healthy, high protein, nourishing, restaurant quality dinners in 20 minutes or less! This is one of my new favorite recipes—the ground chicken is tossed in a creamy and tangy peanut garlic sauce and then wrapped in lettuce for a low carb dinner in a pinch! Get ready for your new favorite weeknight meal and as always - tag me when you make it, so I can repost!!! ⁣ ⁣ Makes 4-6 servings⁣ SAUCE INGREDIENTS:⁣ 1/4 cup low sodium soy sauce or coconut aminos⁣ 1/2 cup creamy peanut butter⁣ 1 lime, juiced⁣ 2 tsp chili garlic paste, or more to taste⁣ 1 tb coconut sugar⁣ 2 tsp ground ginger⁣ 1/4 cup water, to thin as needed⁣ ⁣ FOR THE CHICKEN:⁣ 2 tb avocado oil⁣ 1.5 lbs ground chicken (I like thigh meat but breast is good too!)⁣ 4 cloves garlic, mashed⁣ 1/2 cup salted peanuts, crushed⁣ 3 green onions, sliced ⁣ ⁣ TO SERVE: ⁣ 2 heads butter lettuce⁣ 1 lime, juiced⁣ Cilantro (optional)⁣ ⁣ INSTRUCTIONS:⁣ Start by preparing the sauce. Whisk together all of the sauce ingredients and set aside. Next, add the oil to a large pan over medium heat. Once the pan is hot, add the chicken and cook until almost cooked through (some pink is okay!), about 4 minutes or so. Add the garlic, green onions, and peanuts, stirring 3-4 minutes more. Pour in 3/4 of the sauce and mix to coat well. Let cook a few more minutes, then remove from the heat. Add the lime juice and mix again.
