Peanut chicken lettuce wraps

for more! PEANUT CHICKEN LETTUCE WRAPS for Episode 5 of my DINNER IN 20 series, where I show you how to make healthy, high protein, nourishing, restaurant quality dinners in 20 minutes or less! This is one of my new favorite recipes—the ground chicken is tossed in a creamy and tangy peanut garlic sauce and then wrapped in lettuce for a low carb dinner in a pinch! Makes 4-6 servings
SAUCE INGREDIENTS:
1/4 cup low sodium soy sauce or coconut aminos
1/2 cup creamy peanut butter
1 lime, juiced
2 tsp chili garlic paste, or more to taste
1 tb coconut sugar
2 tsp ground ginger
1/4 cup water, to thin as needed
FOR THE CHICKEN:
2 tb avocado oil
1.5 lbs ground chicken (I like thigh meat but breast is good too!)
4 cloves garlic, mashed
1/2 cup salted peanuts, crushed
3 green onions, sliced
TO SERVE:
2 heads butter lettuce
1 lime, juiced
Cilantro (optional)
INSTRUCTIONS:
Start by preparing the sauce. Whisk together all of the sauce ingredients and set aside. Next, add the oil to a large pan over medium heat. Once the pan is hot, add the chicken and cook until almost cooked through (some pink is okay!), about 4 minutes or so. Add the garlic, green onions, and peanuts, stirring 3-4 minutes more. Pour in 3/4 of the sauce and mix to coat well. Let cook a few more minutes, then remove from the heat. Add the lime juice and mix again. Fill up the lettuce cups with the chicken mixture, drizzle remaining sauce on top and enjoy.
