Ingredients
4 servings
1 tablespoonolive oil
1 tablespoonbutter
1 lbchicken breast
cubed and seasoned with salt and pepper ced
1shallot
min
4cloves garlic
minced
½ cupsun-dried tomatoes
finely chopped
1 cuppearl couscous
2 teaspoonsitalian seasoning
1 teaspoonsmoked paprika
½ teaspoonkosher salt
½ teaspoonblack pepper
1 ½ cupschicken broth
½ cupheavy cream
0.5 bunchkale
thinly sliced
½ cupParmesan cheese
freshly grated, plus more for topping Fresh basil
Instructions
Step 1
In large skillet Heat the butter and oil and add the chicken, searing on all sides until lightly browned, about five minutes.
Step 2
Add the shallot and garlic and cook a few minutes until softened.
Step 3
Add the sun-dried tomatoes, couscous and seasonings and stir until everything is well coated.
Step 4
Add the broth, stir, bring to a simmer and then cover and simmer for 15 minutes until the liquid is absorbed and the couscous is al dente.
Step 5
Stir in the pesto, cream, kale and Parmesan and serve topped with more parm, basil and pepper!
