Ingredients
5 servings
7 ouncespasta noodles
uncooked
1 poundlean ground beef 90/10
64gonion
small, diced
100gbell pepper
diced
100gzucchini
diced
100gcelery stalks
diced
100gcarrot
diced
½ tablespoongarlic paste
or minced garlic
1 tablespoonparsley
1 tablespoonoregano
14.5 ouncecan crushed tomatoes
8 ouncecan tomato sauce
1 cuplow fat cottage cheese
1 cupskim mozzarella cheese
¼ cupparmesan cheese
1egg
large, whisked
Instructions
Step 1
1. Preheat the oven to 350 degrees and arrange oven safe containers on a cookie sheet. Spray lightly with cooking spray.

2. Cook your pasta according to package directions in salted water.
Step 3
Set aside.
Step 4
3. Cook your beef over medium high heat until it is no longer pink.
Step 5
Turn off the heat and strain out the grease.
Step 6
4. Return heat to medium high and add in the vegetables, garlic, and spices. Cover and cook 3-5 minutes until the veggies are slightly tender.

5. Stir in tomatoes, tomato sauce, cottage cheese, parmesan cheese,

1/2 cup mozzarella, pasta, and the egg.

6. Evenly dump the lasagna into the containers and top with remaining cheese.

7. Bake for 30 minutes.

8. Let cool before covering with lids and placing in the refrigerator for up to 5 days.

9. Reheat in the microwave
