Instructions
Step 1
Slice the bell pepper lengthways into two, leaving the stem on. We will be using both sides of the pepper. De-seed the pepper from the inside.
Step 2
Microwave the bell pepper for 3-5 minutes or until tender.
Step 3
In a medium bowl, mix in the tuna, zucchini, cherry tomatoes, cauliflower rice, capers, sliced black olives, mint, parsley and black pepper.
Step 4
Fill up the sliced bell pepper with the tuna mixture. Finish off with the crumbled feta at the top.
Step 5
Bake for around 30 minutes or until the feta cheese starts to soften and the pepper is cooked.
