Kale Pesto with White Cheddar Pasta Sauce

Cauliflower gnocchi
8rotisserie chicken breast strips
frozen
parmesan cheese

2 cupsCottage cheese
Instructions
Step 1
Cook frozen chicken breast strips in large pan until thawed and heated through. Set aside to cutting board and cut into bite-sized pieces.
Step 2
Add cauliflower gnocchi to pan and cook according to instructions, until brown on both sides and cooked through. Remove to cutting board with chicken.
Step 3
Add kale to pan. Add seasoning salt and pan lid. Cook until leaves are bright green and have cooked down by about 1/3.
Step 4
Prepare sauce by blending 2 cups of cottage cheese until smooth. Mix with half a jar of kale pesto sauce. (Skip this step and add whole jar of sauce if you’d prefer a stronger flavor.)
Step 5
Combine all ingredients in pan and cook until warm. Add water if needed to thin sauce to coat. Top with fresh cracked pepper and Parmesan (or other cheese) to taste.
