Ingredients
4 servings

1red onion

1carrot

1celery stick

1potato

1garlic bulb

2 Tbsptomato purée

1 Tbspdried oregano

1 Tbspsmoked paprika

1 tspchilli flakes

500gwhite beans

400gchopped tomatoes

1 litrevegetable broth

1 glasswhite wine
optional

150gpasta
small shaped, always less than you think

nutritional yeast

Instructions
Step 1
Finely dice the onion, carrot, celery + potato, then mince the garlic.
Step 2
2. In a large saucepan, heat 2tbsp of olive oil on a medium heat. Once warmed, add the onion, carrot, celery + potato with a large pinch of salt.
Step 3
3. Sauté for 5-10 minutes until softened + catching the pan, then add the garlic, frying until fragrant.
Step 4
4. Add the tomato purée with the oregano, paprika + chilli flakes, cooking out for another 2-3 minutes.

5. Add the chickpeas/beans, chopped tomatoes, veg stock, then season with salt + pepper & bring to the boil.
Step 6
6. Lower the heat + simmer for 10-15 minutes.
Step 7
7. Add the pasta once the soup has simmered + cook until almost al dente. Once cooked, chuck in the spinach + basil, allowing to wilt.
Step 8
8. Spoon into bowls, top with fresh basil, olive oil, nutritional yeast + more chilli flakes - enjoy!
