360gwater

400gbread flour
12-14% protein

60gwhole wheat flour

2 Tbspolive oil

Instructions
Step 1
In a bowl mix flour, water, sugar and olive oil. Mix until combined, then let it sit for 30 minutes.
Step 2
Combine yeast and 2 tbsp water and add it to the dough together with the salt. Mix until well combined and let it rest at room temperature for another 30 minutes.
Step 3
Do a set of stretch & fold’s, rest for 30 more minutes and repeat the stretch & fold.
Step 4
Cover the bowl and place in the fridge for 4-48 hours. The longer, the more complex flavors. I’d recommend to leave it at least overnight.
Step 5
Add some olive oil to the bottom of your cast iron pan or 9 x 13 inch baking pan, transfer the dough and spread it out without degasing it too much. Cover and let it rise for 1-2 hours.
Step 6
Dimple it with lightly oiled fingers, add some more olive oil and let it proof for 1 more hour.
Step 7
Finally add a generous pinch of flaky salt and some fresh rosemary (or whatever toppings you prefer) and bake at 250°C for 20-25 minutes. Remove from the pan and let it cool for at least 15 minutes.
