Ingredients
8 servings
300gwhole spelt flour
200gall purpose flour
375gwater
3gdry yeast
10gsalt
sundried tomatoes
finely chopped
1 tsporegano
2 Tbspolive oil
Toppings (use whatever you like)
Instructions
Step 1
In a large mixing bowl combine all ingredients for the dough. Let it sit for 15 minutes, then do a set of stretch & folds, cover and let it ferment in the fridge overnight.
Step 2
Drizzle some olive oil and semolina on a baking tray, stretch out the dough, cover and let it rest at room temperature for 1-2 hours.
Step 3
Drizzle more olive oil on top of the dough, dimple with your fingers, then add your toppings. Optionally spritz with some water.
Step 4
Bake in the preheated oven at 250° for 20-25 minutes until deep golden brown.
Step 5
Let it cool for at least 30 minutes. Enjoy!
