Ingredients

olive oil

1onion
medium, choopped

2bell peppers
small, chopped

ground cumin

½ tspground coriander

2 glovesgarlic
minced

1 cupquinoa
rinsed and drained

1 x 420 grtin of black beans
drained and rinsed

1 cupfrozen corn kernals
or fresh

1 x 420tin diced tomatoes

1 cupveggie stock

¼ cupfresh cilantro

avocado
ripe

2 stalksscallions
chopped
1lime inwedges

pumpkin seeds
optional
Instructions
Step 1
Heat oil and add onion, peppers, cumin, and coriander powder and cook until onions translucent.
Stir in garlic and cook 30 seconds.
Add in quinoa, black beans, corn kernel, tomatoes slat and pepper and stir.
Pour in stock and bring to boil with lid on. Simmer of 20 - 25 mins until liquid is absorbed.
Let sit for 5 mins while chopping avocado into fans and dicing scallions.
fluff, serve with avo, scallions sprinkled and wedge of lime
