Instructions

For the Caramelized Onions

Step 1
Heat olive oil in a pan over low heat.
Step 2
Add the onion slices. Cook the onions for 20 minutes until soft. Add the sugar and cook for 5 minutes until golden brown.

For the filling

Step 3
Add the olive oil to a medium-sized pan. Heat over medium heat. Add the bacon and chorizo. Cook for 10 minutes until done.

To assemble

Step 4
Pre-heat oven to 180°C.
Step 5
Use a small serrated knife and cut a hole In the French loaf, then spread with tomato purée. Layer the loaf with tomato, bacon and chorizo filling, and top with mozzarella and caramelised onions.
Step 6
Bake for 15 minutes until browned and garnish with fresh basil leaves.
