Step 1
Chop veggies. Season with salt, pepper & olive oil and roast at 425°. Eggplant: 25-30 minutes. Squashes: 10-15 minutes.
Step 2
Make tofu ricotta from wicked lasagna recipe
Step 3
Cook pasta, al dente. Add 1/2 of the sauce to pasta.
Step 4
Layer dish as such: spray 13 x 9” pan with Pam or olive oil. Add a layer of sauce to the bottom of the pan. Layer pasta. Add half tofu ricotta. Add half of the veggies. Add sauce. Add grated mozzarella cheese. Repeat layer. Top with liquid mozzarella.
Step 5
Bake at 350° for 20-30 minutes until bubbling at the sides. Broil on low until cheese is browned.
