Instructions

Step 1
Start by separating the egg yolks from the whites. Move them into a bowl and whisk together with the vinegar. Double boil the mixture over some hot water for about 3 minutes until the consistency becomes runny.
Step 2
Melt the butter in a pot and remove from the heat. Wait for it to cool down until it's ok to touch without burning. Very slowly drizzle it into the yolk and vinegar mixture making sure to whisk constantly and vigorously.
Step 3
Once you reach a thick consistency add the lemon juice and salt and whisk a little more. The sauce is ready!
