Step 1
After separating the egg yolks from the whites, move the bowl with the yolks over some boiling water (to double boil) and add the butter and sugar. Whisk until a cream is formed.
Step 2
Remove that from the heat and start whisking the egg whites. Do so until properly firm and add that to the yolk cream. Fold it in nicely without whisking (you dont want to lose the air you incorporated by whisking the whites). Your cream is ready
Step 3
Make sure the coffee you're using is at most room temperature (the colder the better). Dip each biscuit and layer them into a container. I used Lotus biscuits and they soak in the coffee super quickly so be VERY quick when dipping. After the first layer of biscuits add the cream and so on, until you run out of space. On the last layer add the cream followed by a dusting of cocoa powder.
Step 4
Refrigerate for at least 2 hours, overnight is ideal. Enjoy!
