1 tspbicarbonate of soda
1 cupwater

1 cupdried dates
pitted, chopped
⅔ cupwalnuts

1 cupcaster sugar
1egg yolk
1 ¾ cupsplain flour
2 tspvanilla essence
Maple Ginger Butter
Instructions
Step 1
Preheat oven to 160°C. Line and grease a 14cm x 21cm loaf pan. Combine butter, soda, water and dates in a large bowl. Stand for 10 minutes.
Step 2
Add nuts, sugar, egg yolk, flour and vanilla; stir until combined. Pour mixture into prepared pan.
Step 3
Cook for about 1¼ hours, or until cooked when tested. Stand bread in pan for 10 minutes; turn onto a wire rack to cool.
Step 4
Beat butter with an electric mixer until light and fluffy. Beat in remaining ingredients. Serve slices of bread warm with maple and ginger butter.
