Ingredients

For the Bowls
1 cupcherry tomatoes
quartered, or grape
1 cupenglish cucumber
diced
¼ cupred onion
diced
⅓ cupGreek olives pitted
½ cupfeta cheese crumbles
4 cupscauliflower rice
2 cupsquinoa
cooked, alternative to rice
tzatziki sauce
For the Chicken
Instructions
Step 1
Combine all the ingredients for the chicken marinade in a bowl or ziplock bag and add the chicken - mixing well to coat evenly. Allow to marinade for at least 30 minutes (several hours is best).
Step 2
Preheat oven to 400 degrees. Heat a large cast iron skilled over medium heat, add avocado oil, and swirl to coat. Add in the chicken and spread it into a single layer. Let it brown for 4-5 minutes before turning it. Continue to cook another 3 minutes, then transfer to the oven to cook through. Alternatively, you can opt to cook the chicken on the grill.
Step 3
While the chicken cooks, assemble the bowls.
