Loaded Potato with Steak Bites and Chimichurri

Decided to take steak and potatoes and give it a little twist!
That air fryer potato gets a super crispy skin, while the inside is fluffy and light. Add some juicy steak and spicy chimichurri and you have yourself a meal that is always a hit.

Chimichurri
Instructions
Step 1
Preheat air fryer to 400 degrees.

Step 2
Rub your olive oil all over your potato and season with 1 tsp salt.


Step 3
Air fry for 30 minutes, flipping halfway through.
Step 4
In a food processor, mix together all your chimichurri ingredients. Pulse ingredients together until combine. You still want it to be chunky, so make sure not to over blend. Leave in fridge until ready to serve.

Heat a cast iron pan over high heat.

Step 6
Pat your steak dry to remove any access moisture. Season both sides with remaining salt and pepper.



Step 7
Once your cast iron is heated up, add in your avocado oil (or any high temp oil). Cook your steak to your liking (I did medium rare). Medium rare: 4-5 min each side.

Step 8
While cooking your steak, make sure to render down the fat cap and also add 2 tbsp butter at the end and baste your steak in it.

Step 9
Remove your steak from the cast iron and let rest for 5-10 minutes. Then slice into bite size pieces.
Step 10
Once your potato is done, slice it open and add 2 tbsp butter to the inside to melt.

Step 11
Remove a small sliver of the top and scoop out a little of the inside, so your steak bites have somewhere to go.
Step 12
Season the inside of the potato with a little pepper, then add your steak bites, top with flaky salt and your chimichurri. Enjoy!
