Vegetable Soup - Elder Scrolls
Some might claim that an ordinary vegetable soup has no
business being so powerfully healthy, but there's no arguing with
results. While it might not cure everything that ails you (try a
shrine for that), it comes pretty close. Every spoonful is loaded with
native vegetables and packed with flavor.
Pairs well with: garlic bread

Ingredients
6 servings
2 Tbspbutter
¼ tspgarlic powder
2leeks
white and light green parts, halved, sliced
3carrots
large, diced
2 cupsbutternut squash
or sweet potato, peeled and diced
½ tspsalt
½ tspseasoning
2 canscarrots
peas, or other canned vegetables
½ cuppearl barley
4 cupsvegetable broth
2 cupswater
or broth
1 cupkale
chopped, or carrot greens
½ tspground cumin
optional
½ tspcurry powder
optional
Instructions
Step 1
I. Melt the butter in a large saucepan over medium heat, then add the
garlic and leeks and cook until they are soft and fragrant, 5 to IO
minutes. Add the carrots and squash, stirring to coat with butter,
followed by the salt and Stormcloak Seasoning. Add the tomatoes
and barley, then pour in the vegetable broth and water.
2. Let the soup simmer for about 45 minutes, then check to see if the
barley is cooked through. If not, cook a little longer. Just before
serving, add the chopped greens and stir to incorporate.
Step 2
For a more Imperial touch, add 1/2 teaspoon each ground cumin and curry powder.
Step 3
Recipe calls for 28oz (800g) or two cans diced tomatoes, can sub other canned veggies or just add 3 1/2 cups other fresh vegetables instead.
Step 4
Since not using tomatoes, probably use broth instead of water.
Step 5
Makes 6-8 servings.
