Birch Cookies - Elder Scrolls
Birch trees are some of the hardy varieties that still thrive in the cold
Skyrim climate. These cookies honor those stalwart trees and their
enterprising spirit with miniature versions of the birch logs that burn
in many a hearthfire, keeping residents warm and snug.
Pairs well with: hot tea or warm oat milk.

Step 1
To make the dough:
I. In a medium bowl, cream together the sugar and butter, then stir in the
vanilla, egg, salt, and nutmeg. Gradually add in the flour until you have
a dough that is no longer sticky, but isn't yet crumbly and dry. Form into
a flat disk, wrap in plastic, and refrigerate for about an hour.
2. When you are ready to bake, preheat the oven to 350*F and line a
baking sheet with parchment paper. Working with one-half of the
dough at a time, rollit out into a rope no more than an inch thick.
Cut at slight angles into pieces about 3 to 4 inches long and set on the
prepared baking sheet. Use any extra dough to add little branches to
some of the logs. Don't worry if they look a little odd-the frosting
will cover them nicely. Repeat with the remaining dough
3. Bake the cookies for about 12 minutes, until they are firming upand
just starting to turn golden on the edges Move to s a cooling rack.
Step 2
To make the frosting:
4. While the cookies are baking, beat together the butter, powdered
sugar, vanilla, rum, and just enough cream to make a nice, thick
frosting. When the cookies are completely cool, spread a little of the
frosting on each one, smoothing out with a spoon or fingertip. Drag
the tines of a fork lightly along the frosting to give the impression of
tree bark, then dust with a little extra nutmeg.
Step 3
Dough has to chill 1 hour! Can use 4-6 Tbsp oat milk in dough.
