Instructions
Step 1
Pierce the potato all over with a skewer or sharp knife, microwave it for 2 minutes 30 seconds, then turn over and microwave for another 2 minutes 30 seconds. Chop into roasties, spray a large skillet or frying pan with low-calorie cooking spray and then cook the potato over a high heat for a few minutes, turning often to crisp up all sides.
Step 2
Remove the potato from the pan and add the chicken thighs, seasoned with salt, pepper and 1 teaspoon of the Italian seasoning. Move the chicken to one side and add the cherry tomatoes and red pepper, then season with more salt and pepper. Stir in the passata along with the remaining Italian seasoning.
Step 3
Cook over a medium heat for 7-8 minutes until the chicken is nearly done. Give everything a good stir, then add small dollops of the harissa and crème fraiche along with pieces of mozzarella around the pan.
Step 4
Place the calabrese under a hot grill for a few minutes, or until the cheese has melted, and enjoy.
