Ingredients
6 servings

8 oznoodles

1 teaspoonolive oil

1onion
small

1garlic clove
minced

2 x 6.5cans of tuna
drained

⅓ cupgreen pepper
finely chopped

½ cupcarrots
finely chopped

¼ cupfresh parsley
finely chopped

¼ teaspoonpaprika

½ cuplow fat sour cream

1 cuplow fat cottage cheese

½ cupplain nonfat yogurt

½ cupbread crumbs
toasted

¼ cupgrated parmesan cheese
Instructions
Step 1
Cook noodles according to directions on the package omitting salt. Rinse and drain.
Step 2
Preheat the oven to 350 Fahrenheit.
Step 3
In a non-stick skillet heat oil over medium high heat saute onion and garlic until onion is transparent for about 2 to 3 minutes frequently.
Step 4
In a large bowl combine sauteed onion and garlic with tuna, green pepper, carrots, parsley and paprika and set aside.
Step 5
In a small bowl blend together sour cream, cottage cheese and yogurt. Add to tuna mixture along with noodles. Pour into a 9x11x12-in casserole pan. Combine bread crumbs and parmesan cheese and sprinkle on top lightly.
Step 6
Bake 30 to 45 minutes until the top is lightly browned.
