Instructions
Step 1
Butterfly chicken breast. Pound if needed
Step 2
Dredge chicken in flour
Step 3
Mix eggs and cheese in a shallow dish
Step 4
Get sauté pan ready with oil. Hot
Step 5
Dredge floured chicken in egg mixture and brown on both sides in sauté pan. Don’t crown chicken or flip more than once. Remove from pan and set aside
Step 6
Make sure there is still about 2 tbsp of oil and deglaze the pan with wine
Step 7
Add butter and flour and whisk together until smooth
Step 8
Add broth and lemon juice. Bring to a boil and reduce slightly. Turn down heat to simmer and add chicken back in
Step 9
Summer long enough to heat chicken back up(around 5 minutes) and serve over rice or pasta
