Instructions

Step 1
Make the marinade: Combine the tangerine juice, olive oil, soy sauce (or Worcestershire sauce), garlic, cumin, oregano, chili powder, smoked paprika (if using), salt, and pepper in a bowl. Add the cubed beef and toss to coat. Cover and refrigerate for at least 1 hour, or longer if you have time.
Step 2
Heat a drizzle of oil in the Instant Pot using the "Sauté" function (SAUTE button). Once hot, sear the beef chunks in batches for 2-3 minutes per side, or until browned.
Step 3
Add the garlic, onion, lemon juice, apple cider vinegar, bay leaves, cumin, oregano, chipotle powder (or smoked paprika), and adobo seasoning to the Instant Pot. Stir to combine.
Step 4
Note: Adobo seasoning can vary in spiciness, so start with 2 tablespoons and taste the sauce after the pressure cooking step. You can add more adobo seasoning for a spicier flavor.
Step 5
Add the brown sugar (optional) and cook for an additional minute, stirring constantly, to toast the spices slightly.
Step 6
Add the seared beef chunks (and discard the marinade) and beef broth or water. Scrape up any browned bits from the bottom of the pot with a wooden spoon.
Step 7
Close the lid of the Instant Pot, ensuring the valve is set to "Sealing" (SEAL). Pressure cook on high pressure (MANUAL / PRESSURE COOK button) for 90 minutes.
Step 8
Let the pressure release naturally for 10 minutes, then release any remaining pressure manually (VENT button).
Step 9
Once venting is complete, open the lid and remove the beef. Shred the beef using two forks and discard the bay leaves.
Step 10
Return the shredded beef to the Instant Pot with the cooking juices. Toss to coat and let it sit for an additional 10 minutes to allow the flavors to meld further.

Warm up some soft tortillas in a skillet or the oven. Pile shredded barbacoa onto the tortillas and garnish with chopped fresh cilantro and diced red onion. You can also serve your barbacoa with your favorite toppings like salsa, guacamole, sour cream, or cheese.
