Instructions
Step 1
Mix together cottage cheese, parmesan, lemon zest and 1 cup mozzarella
Step 2
Drain and squeeze moisture from broccoli and add to above
Step 3
Chop spinach and parsley and add to above
Step 4
Combine 4 cups marinara sauce and 1 cup water in a casserole dish. Stuff cottage cheese mixture into shells, stuffing full with a spoon and place them on top of the sauce in the casserole dish.
Step 5
Cover shells with remaining marinara sauce and the rest of the mozzarella cheese.
Step 6
Cover with lid or foil and bake until shells are soft, approximately 30 minutes.
Step 7
Serve with green salad
