Cook quinoa in 1 cup salted water. Finely chop all veggies. Mix vegetables and quinoa in a large bowl. Mince lemon and make a dressing with the oil and lemon juice. season dressing with black pepper and a pince of allspice. Pour dressing over vegetables and stir to combine. May be eaten immediately, but it improves if left refrigerated overnight.
