Instructions
Step 1
In a small bowl, in enough boiling water to cover, soak mushrooms until tender, about an hour.
Step 2
(If they float, weigh them down with a cup.)
Step 3
Meanwhile, in a large serving bowl or salad bowl, combine barley, shallots, garlic, chives, thyme, oil, vinegar and kale.
Step 4
When mushrooms are ready, drain and mince them.
Step 5
Add barley mixture and toss well.
Step 6
Serve at room temperature or slightly chilled with grilled or poached chicken or as an entree accompanied by a quick saute of seasonal vegetables.
Step 7
Note: The mushroom soaking water is quite tasty and can be added to soups or stews.
