Instructions
Step 1
Add potatoes to boiling water for ~ 20 minutes to soften (or steam!), until soft enough that a fork pokes through

2. Strain and dry potatoes and add to a baking sheet with parchment paper

3. With the bottom of a cup, press down on each potato to flatten

4. Drizzle with olive oil and flakey salt, and then place in oven on Broil HI for ~25 minutes or until golden brown and crispy

5. While potatoes are crisping, dice bell pepper, cucumber and red onion and add to a bowl
Step 6
6. Mix in yogurt, mayo, mustard, dill and chives
Step 7
7. Once potatoes are done, allow them to slightly cool before mixing them in with the rest of the ingredients
Step 8
8. Top with flakey sea salt and pepper
