Sometimes the simple things in life are the best! This Margherita Chicken is the perfect flavour combo of basil and tomato, topped with delicious, melty mozzarella cheese. We’ve taken all of the flavours of a classic Margherita pizza, but instead of dough we’ve loaded the toppings onto tender, succulent chicken. It’s perfect for those days when you’re craving pizza but prefer something a little lighter.

Instructions

Step 1
Preheat the oven to 200ºC (fan 180ºC/gas mark 6).
Step 2
Spray a saucepan with low-calorie cooking spray and place over a medium-high heat. Add the onion and sauté for 5–6 minutes until golden brown, then add the tinned tomatoes, garlic granules and stock, stir and bring to the boil. Reduce the heat and simmer for 15 minutes.
Step 3
While the Margherita sauce simmers, spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the chicken breasts and seal for about 2 minutes each side, until golden, then arrange them in the ovenproof dish.
Step 4
After the sauce has been simmering for 15 minutes, stir in the chopped basil and season with pepper. Spoon the sauce over the chicken breasts in the ovenproof dish. Tear the mozzarella into pieces and scatter it over the top, then bake in the preheated oven for 25 minutes, until the chicken is cooked through and the cheese is melted and golden.
Step 5
Remove from the oven, scatter a few basil leaves on top and serve with your choice of accompaniment.
