Instructions
Step 1
The morning of, or day before make tanzhong with 40g flour, 200g milk. The morning of, soak all seeds and oats in water. Start baking when Tanzhong is cooled or oats have been soaking for one hour)
Step 2
Two hours later, fill the bottom of the bread machine with 1c 115 degrees Fahrenheit water. Add butter and honey.
Step 3
Add in seeds, the Tanzhong mixture, and the flour (SET ASIDE THE REMAINING 1/3c WHEAT FLOUR. (You may or may not need it depending on the humidity in your area. Some days I only need a quarter cup extra, some days I need the entire cup of flour.) Top with salt and yeast and let the dough do its thing. Check after 10 minutes to see if more flour is needed. Add slowly.
Step 4
The dough will go to almost the end of the dough cycle (20 min prior to ending is best). If you forget, that’s fine).
Step 5
Flip onto surface and push into a flat-square. Cut in half and form into little logs (work for about a min). Cover and rest for 30 min.
Step 6
Press down again, knead for a min, roll into a loaf shape. Place it into a greased bread pan (cooking spray works too). The other half of the dough can be made into 10-12 buns/little pita things. I like this. Make 12 balls, flatten against silicone mat, and let both dough’s rise about 30 minutes. You can rub a bit of honey and oil on the dough and it’s nice. Meanwhile, preheat your oven to 400.
Step 7
When the dough is done rising, place it in the oven to bake for 30 minutes at 400. Check at the 15 minute mark and cover lightly with foil if need be so the bread doesn’t get too dark on top. When finished baking, remove bread from pan promptly and let cool on a baking rack.
