Step 1
Heat oven to 180 degrees Celsius. Select a vented setting if you have it in your oven. It will help with removing moisture and creating clusters
Wet mix
Step 2
Beat the egg white until it starts whitening

Add stevia (more if you like sweet breakfast), salt and cinnamon

Beat until hard peaks
Dry mix
Step 5
Mix all other ingredients in a separate bowl
Baking

Line an oven tray with parchment

Only when the oven is at temperature, fold the wet and dry mixtures together until the dry mix is evenly coated

Spread onto the oven tray
Step 9
Bake in the bottom of the oven at 180 for 15 minutes or until it is slightly browned. You may have to turn the tray halfway through the cooking time for evenness.
Step 10
Let it cool in the tray. Only store when completely cooled.
