Instructions

Step 1
Preheat oven to 400°.
Step 2
Dice bacon and add to a cold cast iron skillet. Heat to medium-high and cook until crisp. Remove bacon but keep oil. Set bacon on a paper towel to absorb any excess fat.
Step 3
While bacon is cooking, dice onion, pepper, mushrooms and hashbrown patties. Once bacon has been removed from pan, add the veggies to the bacon fat and cook until softened.
Step 4
Meanwhile, crack eggs into a large bowl and whisk with cream, salt, pepper and chives until well incorporated.
Step 5
Add the bacon back to the pan and mix well with the veggies. Sprinkle the cheese on top and pour the egg mixture over top. Do not stir.
Step 6
Cook for a few minutes or until the egg starts to set at the edge of the pan and you can slide a spatula along the edges. Remove from heat.
Step 7
Transfer to the oven and bake uncovered for 8-10 minutes or until eggs set in the middle (no wobble).
Step 8
Remove and let stand for 5 minutes; cut and serve.
