Instructions

Step 1
Cook quinoa
Step 2
Dice tomatoes and cucumber
Step 3
Put diced tomatoes and cucumber into a bowl with half teaspoon of salt and combine then set aside for 15 minutes

Trim scallions and put them in food processor with mint leaves and parsley, (leave the stems)
Step 5
Pulse until finely chopped and then transfer to large mixing bowl
Step 6
Drain tomatoes and cucumbers then add them to herbs
Step 7
Combine all and season to taste
Step 8
Serve immediately or leave up to 30 minutes to let flavors settle together
