Ingredients

1red onion
peeled and thinly sliced
½ cupoil-cured black olives

4Cara Cara Oranges

¼ cupextra-virgin olive oil
2 Tbspwhite balsamic vinegar
4mandarins
peeled and pitted

Pink peppercorn
grounded, to taste
4Meyer lemons

Instructions
Step 1
Soak onion in ice water and set aside.
Step 2
Trim all white pith from citrus, then slice crosswise into thin rounds and set aside.
Step 3
Core, trim, and very thinly slice fennel bulb; set aside a few fronds.
Step 4
Arrange citrus on a serving platter topped with red onions, sliced fennel, and olives.
Step 5
Blend olive oil and vinegar with salt and peppercorn, to taste; drizzle over the platter.
Step 6
Garnish with torn mint leaves, fennel fronds, and more salt, pink peppercorn, and crushed red pepper to taste.
