Breakfast Tirimasu Pudding
There is almost 30g of protein in this wee little jar and the secret is silken tofu. A great option if you want to switch up your regular overnight oats.

Ingredients

Cream
300gsilken tofu
2Medjool dates
soaked in hot water for 5 minutes and drained
1banana
small
1 tspvanilla extract
½ cupvanilla protein powder
Base
1 ¼ cupalmond meal
¼ cupvanilla protein powder
1 ½ Tbspinstant coffee
2 Tbspcashew butter
runny
2 Tbspwater
plus more depending on how runny your nut butter is
1 TbspRice Malt Syrup
1 tspvanilla extract
salt

Instructions
Step 1
To a food processor, add the silken tofu, dates, banana, vanilla extract and vanilla protein. Blend until smooth.
Step 2
To a small bowl, add the almond meal, vanilla protein, instant coffee and salt. Mix until well combined.
Step 3
Add the cashew butter, water, rice malt syrup and vanilla extract. Mix until a dough-like consistency. If too dry, add more water.
Step 4
Roll the dough into three balls and push each ball into the base of a jar.
Step 5
Divide and top with the silken tofu cream and dust cacao powder on top. Set in the fridge for 4 hours or overnight. Enjoy!
