Tortellini & Spinach Soup
A brothy soup packed with spinach, this is a nice option for lunch or a light dinner. The tortellini cook right in the broth, so there's no need to bring a separate pot of water to a boil. You can double the amount of pasta if you want a heartier, more pasta-filled bowl.

Ingredients
6 servings
1 tablespoonolive oil
1yellow onion
medium, diced
2garlic cloves
diced
2celery stalk
diced
2carrot
medium, peeled and diced
1 teaspoonkosher salt
½ teaspoonfreshly ground black pepper
1 teaspoonitalian seasoning
4 cupschicken broth
or vegetable broth
1 x 14.5 ouncecan diced tomatoes
with their liquid
8 ouncesfrozen tortellini
6 ouncesbaby spinach
Grated Parmesan cheese
for sprinkling
extra-virgin olive oil
for drizzling
Instructions
Step 1
Select the Sauté setting on the Instant Pot and heat the olive oil.
Step 2
Add the onion, garlic, celery, carrot, salt, pepper, and Italian seasoning and sauté for about 5 minutes, until the onion is softened.
Step 3
Add the chicken broth, tomatoes with their liquid, and tortellini.
Step 4
Secure the lid and set the Pressure Release to Sealing. Press the Cancel button to reset the cooking program, then select the Pressure Cook or Manual setting and set the cooking time for 3 minutes at high pressure. (The pot will take about 15 minutes to come up to pressure before the cooking program begins.)
Step 5
When the cooking program ends, release pressure immediately. Open the pot, then stir in the spinach. Let stand for 2 minutes, until the spinach wilts. Taste and adjust the seasoning with salt if needed.
Step 6
Ladle the soup into bowls, sprinkle with Parmesan, and drizzle with extra-virgin olive oil.
