Coconut Creamed Corn
A combination of ideas from several recipes. Still working on a way to thicken it - arrowroot? Option - add ginger at the garlic stage.

Ingredients
4 servings
2 tablespoonscoconut oil
3cloves garlic
1 poundfrozen fire-roasted corn kernels
thawed
3scallions
white and green parts, sliced
¼ teaspooncrushed red pepper flakes
kosher salt
2 Tbsparrowroot powder
for thickening
1can coconut milk
½ cupfresh cilantro leaves
plus more, for serving
1 tablespooncider vinegar
optional
fresh jalapeno
Chopped, canned or dried, optional
Instructions
Step 1
Set corn out to thaw.
Step 2
Add oil to medium-size skillet over medium heat.

Once melted, add garlic and let cook until fragrant, 1-2 minutes.
Step 4
Add thawed corn, scallions, cilantro, red pepper and 1/2 teaspoon salt. Cook until softened.
Step 5
Stir in arrowroot powder to coat.
Step 6
Add the coconut milk and 1/2 cup water and simmer until thickened, about 5 minutes.
Step 7
Remove from the heat and stir in vinegar. Garnish with additional cilantro and / or jalapenos as desired.
