Instructions
Step 1
Beat the eggs then add salt and pepper and add to either a greased small baking tray and bake in the oven for 5 mins at 200 c or fry in a frying pan . The benefit of baking is the shape is rectangular which helps with rolling

Once baked let the omelette cool slightly then flip it over and start adding the toppings. I use a peeler to make ribbon slices of cucumber then slices of avocado and tomatoes . Season with salt and pepper then add sauce of choice I like some hot sauce

Step 3
Roll the omelette up then slice in half . This makes one very large portion or two small portions
