Instructions

Step 1
Use one sheet of matzah and one egg per person, minus 1 egg (e.g. 5 sheets/4 eggs, 3 sheets/2 eggs, etc)
Step 2
Scramble eggs with salt, ideally in a measuring cup. Note how much egg you have and scramble in about an equal amount of milk. For instance if the egg comes to about or a bit over the 1 cup mark, beat in 1 cup of milk

Get a large baking dish. Run each sheet of matzah under water, then place in dish, breaking if needed to fit.

Pour egg mixture over matzah. Press down and break up as needed to get eggs to cover matzah but don't worry about it too much!

Soak for 10 minutes
Step 6
After 10 minutes, coat pan in butter and heat over medium-low until bubbling. Raise heat to your usual scrambling temperature (about medium-high for my stove)
Step 7
Add sheets of matzah 1 by one, allowing to fry for a moment, before breaking up with spatula and moving to the side
Step 8
When all matzah is added, stir around for a minute to really cook the egg in the matzah
Step 9
Pour the egg mixture over the matzah and scramble
Step 10
You can serve matzah brei sweet or savory or however you can imagine. Syrup is a traditional topping, as is sour cream, apple sauce or jelly. I've recently made it with cherry preserves and sour cream and another batch with cheese, sour cream and salsa. Sky's the limit!
