Instructions
Step 1
fry shallots + lemon in pan with tbsp of oil
Step 2
add thyme basil + garlic and toast (abt 2 mins)
Step 3
add broth and potatoes and let sit while you prepare cabbage
Step 4
chop cabbage and add to broth once potatoes are tender
Step 5
let sit until broth turns a deep purple color (abt 5 mins)
Step 6
add red wine vinegar and reduce heat. let sit until soup turns magenta. Add lemon juice to reach desired color
Step 7
let sit until vinegar taste has dissolved, top with parsley, spring onions + feta cheese
