Step 1
Spread light mayo or mayo of choice on the bread then add the salad ( I used a mixed salad with thin beetroot and it was so good ) and avocado and squeeze a little lemon juice on the avocado




Step 2
Add the radish smoked salmon red onion and cherry tomatoes then season to taste with salt and pepper and add another squeeze of lemon juice on top . Add any fresh herbs of choice like dill or basil and enjoy
