Step 1
Skip the first step if you are using purchased plain frozen yoghurt. To make your own frozen vanilla yoghurt, blitz the Greek yoghurt, vanilla essence and maple syrup in a blender. Pour this mixture into a small plastic container and place in the freezer. Every 30 minutes you will need to stir this mixture well to ensure it has an even consistency as it freezes. After around 2 hours the texture should start to resemble frozen yoghurt however leave in the freezer longer if you prefer a firmer composition. This should make four scoops of 60 g frozen yoghurt. Slice the banana lengthways and add two scoops of yoghurt and top with 50 g of berries. For extra sweetness you can add a drizzle of maple syrup. Suggested servings: Two.
