Instructions
Step 1
Preheat oven to 400°F. -- Convection oven to 350°F.
Step 2
CCP--Wash & sanitize hands & prep area. Wear gloves & discard per facility HACCP guidelines.
Step 3
1. Combine lemon juice, oil, chili powder, cumin, paprika, garlic powder, salt, and pepper in bowl with a wire whisk; set aside.
Step 4
2. In large bowl, add shrimp. Add lemon seasoning mix to shrimp and toss until combined.
Step 5
3. Arrange seasoned shrimp in a single layer in steam table pan sprayed with nonstick cooking spray.
Step 6
4. Bake 8-10 minutes or until shrimp are cooked through and desired internal temperature is reached.
Step 7
CCP: Final internal cooking temperature 145°F seconds for 15 seconds.
Step 8
CCP: Maintain holding 135°F or above.
Step 9
Serve 5-7 shrimp per portion.
Step 10
Discard leftovers held for service.
