Step 1
1. Season the salmon fillets with salt and pepper.

2. In a large skillet, heat the olive oil over medium heat. Add the salmon and sear each side until golden brown. Remove the salmon from the skillet and set aside.

3. In the same skillet, add the vine cherry tomatoes and sauté until slightly blistered; remove and set aside for garnish.

4. Add the shallots, garlic, and capers to the skillet. Sauté for a few minutes until the shallots become translucent.

5. Stir in the sliced courgettes, whole cherry tomatoes, chilli flakes, salt, and pepper. Cook until the vegetables are just softened.

6. Lower the heat and add the cream cheese, Parmesan, and water to the skillet. Stir until the cheeses melt and the sauce thickens.

7. Return the salmon to the skillet, nestling it into the sauce. Add the blistered cherry tomatoes on the vine.

8. Cook gently until the salmon is heated through. Garnish with fresh basil leaves just before serving.
