Baked salmon with veggies

Instructions

Step 1
Let salmon sit 10 min to come to room temperature and turn oven to 425°F

Line a small baking sheet with foil and drizzle a little olive oil on it. Spread it evenly around pan.

Place salmon in the pan and coat the top with olive oil, then season with bruchetta seasoning blend.
Step 4
Slice tomatoes in half and place in a bowl. The slice pepper and cut slices into 1" pieces. Place these with the tomatoes in the bowl. Drizzle a little olive oil and season with bruchetta as well. Mix and place in pan with salmon

Bake salmon and veggies for 15 min. Make sure to check the internal temp of the salmon before removing from the oven.
Step 6
Sprinkle with feta cheese before serving and enjoy!
Step 7
Veggies can be swapped for others like chopped zucchini, green peppers, etc. Just make sure they all have the same cook time as the salmon. Think I may even add chickpeas next time! Seasonings can also be swapped out for a different desired flavor as well.
