Ingredients

26 ouncetortellini

1 pintcherry tomatoes
½ cupblack olives
sliced
½ cupbanana peppers
sliced
½ cuproasted red peppers
diced
0.5 poundpepperoni slices
cut it to quarters if large
0.5 poundsalami
quartered or diced
0.5red onion
diced
Mozzarella cheese ball pearls
dressing
for the
¼ cupgrated parmesan cheese
¾ cupolive oil
½ cupred wine vinegar
2 Tbspitalian seasoning
1 tspred pepper flakes
½ tspsalt
1 tspblack pepper
2garlic cloves
minced
Instructions
Step 1
Cook the tortellini according to the package directions. Careful not to overcook. Drain and rinse in cold water. Add the tortellini in to a large mixing bowl.
Step 2
To the bowl with the tortellini add the cherry tomatoes, red onion, banana peppers, olives, roasted red peppers, mozzarella cheese, pepperoni and salami.
Step 3
In a separate bowl whisk together the olive oil, red wine vinegar, garlic and seasonings.
Step 4
Pour the vinaigrette over the tortellini salad and mix well.
Step 5
Refrigerate 30 minutes before serving. Refrigerate leftovers up to 3 days.
